Recap of today: TGIF!! Today I just couldn’t do an egg for breakfast. I ended up eating the last of the ratatouille leftovers. For lunch, I made a salad. Easy. For dinner, I put three chicken breasts in a crock pot, seasoned them, poured a can of Rotel tomatoes over the top, then a large can of green chilies. I let that cook all day then shredded the chicken in the juices. I added oven-roasted brussel spouts on the side and it was a pretty good, easy dinner.
What was a success today? I found more of this turkey bacon! It will help the breakfast eggs go down easier!! I tastes good!

I could only find it at Whole Foods. I’m so happy to have “bacon” since I’m eating so many eggs!
