Day 18 – MLK Jr Day

Recap of today:  Breakfast…more eggs.  I made some chicken wings seasoned in the rib rub from The Book for lunch.  Dinner was a new recipe.  I made the Slow Cooker Ratatouille Soup from http://mywholefoodlife.com/2014/09/16/slow-cooker-ratatouille-soup/ with grilled kalbi style short ribs on the side.  It was delicious!  Usually we marinade the kalbi ribs in Korean seasoning, but this time is was just salt, pepper and garlic powder.  It was good!

What was a success today?  I made a tasty new recipe.

What was a challenge today?  More eggs for breakfast.

How am I feeling physically today?  Great! Lots of energy for Zumba.
